Now that you have this unique and health-boosting mushroom on hand, you might be wondering how best to prepare it.

Lion’s Mane has a meaty texture and mild flavour that makes it versatile for all sorts of dishes. Whether you're new to cooking with mushrooms or a seasoned chef, we've got you covered with some simple and delicious recipes that highlight its wonderful qualities.

Sautéed Lion's Mane Mushrooms with Soy Sauce

A quick and tasty side dish in under 10 minutes, this recipe brings out the natural flavours of Lion’s Mane with just a few simple ingredients. It's a perfect introduction to the mushroom's rich, meaty texture.

Ingredients:

  • 8 oz Lion’s Mane mushrooms
  • 2 tbsp butter or olive oil
  • 1 tbsp soy sauce (use tamari or coconut aminos for a gluten-free option)
  • Sea salt, to taste

Instructions:

  1. Clean and slice the mushrooms into 1/4-inch pieces, removing any dirt or debris.
  2. Heat a dry skillet over medium-high heat and cook the mushrooms for 2 minutes on each side, letting the water evaporate.
  3. Add the butter or oil and cook until the mushrooms are golden brown.
  4. Finish with a splash of soy sauce and a pinch of salt. Serve immediately!

Lion's Mane Mushroom Egg Drop Soup

A light, warming soup with the added richness of Lion’s Mane, perfect for a quick meal when you need comfort in a bowl.

Ingredients:

  • 1 tbsp vegetable oil
  • 1 tbsp minced ginger
  • 1 tbsp scallion whites, thinly sliced
  • 2 tbsp scallion greens, thinly sliced (for garnish)
  • 1 qt chicken stock
  • 2 tbsp soy sauce
  • 1/2 tsp Kosher salt
  • Dash of white pepper
  • 1 tsp sesame oil
  • 6 oz Lion’s Mane mushrooms
  • 2 eggs, beaten

Instructions:

  1. Heat oil in a medium stockpot over low heat. Add scallion whites and ginger, and cook until translucent.
  2. Add the stock, soy sauce, salt, white pepper, and sesame oil. Bring to a simmer.
  3. Add the Lion’s Mane mushrooms and simmer for 5 minutes.
  4. Slowly whisk in the beaten eggs.
  5. Serve hot and garnish with scallion greens.

Lion's Mane Mushroom "Crab" Cakes

These plant-based crab cakes are so convincing, they’ll fool even the most devout seafood lovers. The tender texture of Lion’s Mane mimics real crab meat perfectly!

Ingredients:

  • 6 oz Lion’s Mane mushrooms, pulled into bite-sized pieces
  • 1 egg
  • 1/4 cup minced yellow onion
  • 2 tbsp Old Bay seasoning
  • 1 tbsp fresh parsley, chopped
  • 1/4 tsp Kosher salt
  • Black pepper, to taste
  • 3 tbsp mayonnaise
  • 1 tbsp spicy brown mustard
  • 1/4 cup unseasoned breadcrumbs
  • 3 tbsp unsalted butter
  • Slider rolls, Remoulade sauce, lemon wedges, and chives for serving

Instructions:

  1. Mix all ingredients (except butter and slider rolls) in a bowl and form into 6 loose "crab" cakes.
  2. Heat butter in a skillet over medium heat. Once melted, add the cakes and cook until golden brown on each side.
  3. Serve on slider rolls with Remoulade sauce, chives, and lemon wedges.

Lion's Mane Mushroom Steaks with Chimichurri

For a hearty and flavourful dish, these Lion’s Mane "steaks" are pressed and seared to perfection, then topped with a zesty chimichurri sauce.

Ingredients:

  • 2 Lion’s Mane mushrooms

For the Marinade:

  • 2 tbsp coconut aminos
  • 2-3 tbsp avocado oil
  • 2 tsp paprika
  • 1 tsp garlic powder
  • 2 tsp coconut sugar
  • 1 tsp flakey salt
  • 1/2 tsp chili flakes

For the Chimichurri:

  • 1 cup flat-leaf parsley, finely chopped
  • 2 tbsp fresh oregano, chopped
  • 3 shallots, minced
  • 2 tbsp olive oil
  • 1 garlic clove, minced
  • Juice of 1 lemon
  • 1 tsp apple cider vinegar
  • 1/2 tsp chili flakes

Instructions:

  1. Prepare the chimichurri by mixing all ingredients in a bowl and setting aside.
  2. Combine marinade ingredients in a bowl. Press and cook the Lion’s Mane mushrooms in a skillet until they’re flat and browned, then marinate for 15-20 minutes.
  3. Heat the skillet again, cook the marinated mushrooms for 5 minutes on each side, and top with chimichurri sauce. Serve with quinoa or your favourite sides!
